Test sentry-prometheus-exporter to add monitoring info for sentry
In order to be notified if anything goes wrong in sentry ingestion process, it could be great to test sentry-prometheus-exporter[1] and add a couple of alert if the metrics goes wrong.

Given the exporter uses the sentry API and it's available as a docker image, maybe we can consider deploying it in the admin cluster with some precautions using network policies
