replace mailhog by mailpit

Looks like Mailhog is not really maintained anymore (last release is from 2020, issues are not triaged anymore, only pr related to the documentation are merged, ...).

Mailpit looks like a nice alternative with a few extra tools to test HTML emails and ux improvements.
